Top winemaking at 500 meters
Strong winds
Strong winds at such an altitude dry the grapes. As a result, grapes can be harvested later, getting riper berries, making more saturated, stronger wine.
South-west slope of the hill
The abundance of the sun on the slope of Ca'Botta's vineyards makes it possible to grow excellent grapes, that with maturity do not loose their acidity. This is a necessary element for creation of the best Ca'Botta wines.
350-550 meters above the sea level the height of the vineyards
Grapes grown at such height differ by their maturity, higher acidity, denser skin and are richer in tannins and antioxidants. On the hills, the water after the rainfall immediately goes down into the valley. As a result, grapes do not gain moisture and berries do not lose the sugar concentration after autumn rains. Strong winds at such altitudes dry the grapes. As a result, grapes can be harvested later, getting riper berries, making more saturated, stronger wine with a greater potential for its storage.
Tenute Ca’Botta -
Dry wines from dried grapes.
Tenute Ca'Botta makes dense, intense and strong bodied wines with vivid characteristics of elegant balance from dried grapes, using a method called appassimento (the process of grape drying under natural conditions). Willing to give people more than they expect, the winery creates almost all of its wines from dried grapes, similar to Amarone DOCG, including white wines such as Le Poggie and La Callaia.
Rested wines - Ca’Botta’s quality standard
All Ca'Botta wines after bottling are aged in a bottle for a minimum of 6 months at a controlled temperature. As a result, aggressive young tannins disappear, the wine becomes round and elegant. Only mature, rested wines can be purchased - this is the Ca'Botta quality standard.
