Ca’ Botta’s signature Amarone, Cajo’ is made entirely from appassimento grapes grown in hillside vineyards at 380–520 m above sea level, fermented in the patented Fermentino Ca’ Botta® system and aged in 225 L French-style barriques. Deeply concentrated yet composed, it combines ripe cherry and blackberry, dark chocolate, savoury herbs and spice with polished tannins, freshness and a long, persistent finish.
Cajo’ embodies Ca’ Botta’s signature Amarone style: profound concentration, aromatic complexity and structure shaped toward balance rather than sheer weight. Corvina Veronese, Corvinone and Rondinella are hand-harvested from hillside vineyards at 380–520 m above sea level, and the entire harvest is dried using the appassimento method.
Fermentation in the patented Fermentino Ca’ Botta® system develops further aromatic richness and texture, while ageing in 225 L French-style barriques adds depth, polish and complexity. The result is a powerful, layered Amarone whose intensity remains controlled by refined tannins and freshness.
Ripe cherry and blackberry lead the nose, followed by dark chocolate, pepper, thyme, rosemary, floral notes and a subtle smoky character. The palate is broad, dense and layered, with ripe dark fruit, savoury spice and supple tannins. A fine bitter-almond nuance emerges on the long, dry finish, adding complexity and definition while the wine remains remarkably composed.
Excellent with venison, braised beef, roast lamb, slow-cooked game and mature cheeses such as Parmigiano Reggiano or Monte Veronese. Decant for around 40 minutes before serving to allow the wine’s aromatic complexity and structure to open fully.
