Short description

Special concept white dry wine produced from dried grapes with an extra long maceration and a very slow fermentation on the grapes’ residue. This great white wine with a particularly dense body was created through the use of an Italian “grape drying” technology appassamento.

Features

A special white wine made with the same recipe as the legendary Amarone DOCG. Straw yellow color with greenish accents. This wine has a complex, elegant and harmonious structure, the olfactory note starts with scents of peach, pear, yellow apple, exotic fruits and vanilla to be followed by scents of bread crust and flowers. Its acidity is refined and well balanced. Though dry in character, it has a pleasant sweet aftertaste of the dried fruits. A soft and mineral taste on the palate arrives at the end with a structure of exceptional resolve.

This wine ages well for 15-20 years.

Food pairing

LA CALLAIA Bianco Veronese IGT is ready to drink immediately after opening, but for the best enjoyment it requires at least 30 minutes of decantation.

Technical details

Made from a selection of the best grapes collected strictly by hand, with careful quality control. Grapes are harvested in the middle of September. The collected grapes are carefully placed into the net boxes, and dried with fresh air from the outside, ventilated with high altitude mountain air.

Yielded grapes, that have 30% of their mass, are pressed in December. As a result, each bottle has 3,6 kg of fresh grapes.

Vinification: Maceration and fermentation are done in the stainless steel. The duration of the maceration is 10 days at a temperature below 6ºC, fermentation is done for 30 days at a temperature below 12ºC. After the fermentation, the wine is aged in oak barriques, made from American oak for 3 months.
