Prometeo is Ca’ Botta’s most unconventional Amarone: exceptionally dry, intensely spicy and savoury, with a distinctive mature aromatic character that emerges earlier in its evolution. Made entirely from appassimento grapes, fermented in the patented Fermentino Ca’ Botta® system and aged in 225 L French-style barriques, it combines blackberry and ripe cherry with black pepper, liquorice, cocoa and dark chocolate in a powerful yet remarkably dry wine with a long, spicy finish.
Prometeo explores the driest, spiciest and most savoury side of Ca’ Botta’s Amarone style. Corvina Veronese, Corvinone and Rondinella are hand-harvested from hillside vineyards at 380–520 m above sea level, and the entire harvest is dried using the appassimento method. Fermentation in the patented Fermentino Ca’ Botta® system develops concentration, aromatic richness and structure, while ageing in 225 L French-style barriques adds depth and complexity.
Produced without added sulfites, Prometeo follows a deliberately different path from Ca’ Botta’s more classical Amarone expressions. Its distinctive identity is built around dryness, spice and savoury complexity rather than sheer richness. Blackberry, ripe cherry and plum are layered with black pepper, liquorice, cocoa and dark chocolate. The palate is broad and concentrated yet notably dry, with powerful, polished tannins and balanced acidity giving the wine definition and freshness.
As Prometeo evolves in bottle, mature savoury and tertiary notes emerge relatively early, bringing greater prominence to pepper, cocoa, liquorice and spice. The finish is long, dry and persistent, giving the wine a character that is powerful but precise, mature yet energetic.
Excellent with venison, wild boar, dry-aged beef, braised meats and roast lamb. Its dry, spicy character also makes it particularly well suited to mature cheeses such as Monte Veronese and Parmigiano Reggiano. Decant for around 30 minutes before serving to allow its spice, savoury complexity and structure to open fully.
