Prometeo gives Amarone a dark, spice-driven shape. Black pepper rises through concentrated fruit, while a roasted savoury note deepens its firmly dry character.
Full-bodied and tightly structured, it keeps its concentration compact across the palate. Firm tannins and freshness drive fruit and spice forward in a focused line, giving Prometeo its distinctly powerful, tightly drawn character.
Dark garnet.
Blackberry and dried plum open the bouquet, followed by black cherry, liquorice and black pepper. Roasted coffee and cocoa deepen the darker aromatic register.
Full-bodied and compact on the palate, Prometeo has muscular tannins and a pronounced grip. A clear line of acidity carries the fruit through the centre; with air, pepper and liquorice become more pronounced.
Roasted coffee and black pepper remain after the fruit through a long, dry finish.
Serve Prometeo with pepper-crusted ribeye, wild boar braised with juniper, slow-roasted lamb shoulder, charcoal-grilled beef or long-aged Asiago.
Prometeo benefits from roughly 40 minutes in a decanter before serving.
Serve at 17–18°C.
