Short description

Special signature white dry wine produced from dried grapes with an extra long maceration and a very slow fermentation on the grapes’ residue. This great white wine has a particularly great structure and freshness in the body, it was created through the use of an Italian “grape drying” technology appassamento.


A special white wine made using "appassamento" from carefully selected Garganega grapes.

Straw yellow color with slightly golden tones. This wine has a complex, elegant and harmonious structure, the olfactory note starts with scents of peach, golden apple, banana and almond, followed by a scent of white flowers. Its acidity and fruitness are very refined and well balanced. Though dry in character, it has a pleasant sweet aftertaste of the dried fruits. A soft and mineral taste on the palate arrives at the end with a notes of apricots and pears, with an almond aftertaste.

Food pairing

The wine goes well with the first courses from white meats and also with soft and seasoned cheeses and fish.

Le Pergolette Garganega Bianco Veronese IGT is ready to drink immediately after opening, but for the best enjoyment it requires at least 10 minutes of decantation.

Technical details

Made from a selection of the best grapes collected strictly by hand, with careful quality control. Grapes are harvested from the end of September to the first week of October. The collected grapes are carefully placed into the net boxes, and dried with fresh air from the outside, ventilated with high altitude mountain air.

Yielded grapes, that have 80% of their mass, are pressed in November. As a result, each bottle has 1,5 kg of fresh grapes.

Vinification: Maceration and fermentation are done in the stainless steel. The duration of the maceration is 10 days at a temperature below 6ºC, fermentation is done for 20 days at a temperature below 12ºC. After the fermentation, the wine is aged in oak barriques, made from French oak for 6 months.
