Time gives the wine breadth and savoury depth while preserving the freshness of the fruit. The result has the energy for the first glass and the structure to continue naturally through the meal.
Delicate, luminous onion-skin pink with subtle green reflections and a fine, persistent bead.
Red berries and apricot lead the bouquet. White flowers and pear add lift, followed by a light mineral note and bread crust.
The palate is fully dry, with a fine, creamy mousse and lively acidity. Pear and apricot return through the middle, while the long lees ageing gives the wine a smooth, savoury texture.
The fruit gradually recedes towards a mineral and bread-crust close, leaving a clean, persistent finish.
Serve Rosé Metodo Classico with tuna tartare, scallops, salmon gravlax, prosciutto crudo, spaghetti allo scoglio or fresh robiola.
Its dryness and lees-built texture allow it to begin with antipasti and continue naturally through seafood and first courses.
