Le Pergolette is Ca’ Botta’s structured dry expression of Garganega. Appassimento gives the wine breadth and concentration, while a clear almond savouriness draws its ripe fruit into a distinctly dry, savoury profile.
Substantial and firmly shaped, Le Pergolette has the presence of a white made for the main course. Its generosity is carried by freshness, giving the wine enough definition to remain vivid as the flavours at the table become richer.
Deep straw yellow with golden reflections.
Ripe peach and golden apple lead the bouquet, followed by pear, apricot and delicate white flowers.
The palate is broad and concentrated, with fresh acidity running through the ripe fruit. A subtle mineral line adds definition through the middle, while a gentle grip gives the wine a firm, clearly shaped texture.
With a little air, its savoury character becomes more pronounced. The finish is long and firmly dry, with lingering stone fruit and a fine almond note.
Serve Le Pergolette with turbot baked with olives and potatoes, roast chicken with lemon and rosemary, pumpkin-and-ricotta ravioli with sage butter, veal saltimbocca or porcini risotto.
Young goat’s cheese and medium-aged Monte Veronese also suit it well, carrying the wine naturally from the main course into cheese.
Open 10–15 minutes before serving and pour into a generous white-wine glass.
Serve at 11–12°C.
