Torcinato is a dry, spice-led Valpolicella Superiore with a generous, rounded body. Ripe cherry sits at its centre, deepened by tobacco and dark chocolate, while appassimento gives the fruit concentration and breadth.
Its richness is carried in a firmly dry, savoury direction, with spice giving the wine energy and definition through the palate. Substantial and full-flavoured, Torcinato combines ripe fruit with the darker herbal and spicy character that makes it particularly convincing at the table.
Deep ruby red.
Ripe cherry and blackberry lead the bouquet, with blackcurrant adding a darker note. Thyme and other fresh herbs rise through the fruit, joined by a clear thread of warm spice and tobacco.
The palate is full and rounded. Bright acidity keeps the fruit vivid, while firm, tactile tannins give the wine structure. Black cherry carries the centre of the palate, with dark chocolate adding depth.
With air, the fruit becomes more savoury in expression and the herbal-spice character grows more pronounced. The finish is long and firmly dry, leaving dried cherry, spice and a fine bitter edge.
Serve Torcinato with herb-roasted pork shoulder, duck ragù, roast guinea fowl, osso buco, grilled sausages with polenta or porcini risotto. Medium-aged Monte Veronese makes a natural final course.
Open a Torcinato about 30 minutes before serving.
Serve at 16–17°C.
