Cajo’ is built around ripe black cherry, thyme and rosemary, bringing dark fruit and Veronese herbs together in a broad, generous Amarone.
Full-bodied and enveloping, it carries its richness in a rounded, integrated texture. The fruit stays clear through the wine’s warmth, while the herbal character runs through the palate from first sip to finish.
Deep ruby-garnet.
Black cherry and blackberry fill the bouquet, followed by thyme, rosemary and wild herbs. Black pepper, dark chocolate and a subtle thread of smoke complete the nose.
Full and concentrated, Cajo’ gathers substantial tannins into a rounded texture. Freshness keeps black cherry clear through the centre, while dark chocolate and herbs grow more pronounced across the palate.
Rosemary, ripe cherry and a fine bitter-almond note remain at the close.
Serve Cajo’ with rosemary-roasted lamb shoulder, grilled ribeye or tagliata, ossobuco, venison ragù with pappardelle or aged Monte Veronese.
Allow Cajo around 40 minutes in a decanter before serving.
Serve at 17–18°C.
